Ingredients
Nola's Gingernuts
- 125 grams Butter
- 75 grams golden syrup
- 350 grams SR flour
- 200 grams castor sugar
- 1 heaped tablespoon ground ginger
- 1 pinch salt
- 1 teaspoon bicarbonate of soda
- 1 egg, lightly whisked
- 1 teaspoon grated orange rind

- Line two baking trays with baking paper or silicon mats.
Turn oven to 160 degrees - Place 125g butter and 75g golden syrup in bowl and melt
2 min/60 degrees/speed 2 - Add 1 teaspoon bicarb soda 5 sec/ speed 3
- Add 350g SR flour, a pinch of salt, 200 castor sugar, 1 tablespoon ground ginger and
mix 10 sec/speed 4 - Add 1 beaten egg and orange rind
Mix 10 sec/ speed 6
*Check mixture is combined and mix for longer if necessary - Turn bowl upside down over a floured baking mat and release the blade. Use silicon spatula to remove all the dough from the bowl, bring together with your hands into a log shape and then cut into 24 slices, rolling into balls and placing on the baking sheet as you go, well apart from each other.
Flatten the tops using a fork and bake for 15-20 mins until golden.
Transfer on a wire rack to cool.
