Ingredients

ORANGE AND DATE MUFFINS

  • 5 large pitted dates
  • 2 small oranges peeled and quartered
  • 1 small orange juiced
  • 125 grams unsalted butter cubed
  • 230 grams Self Raising Flour
  • 150 grams Raw caster sugar
  • 1 large egg
  • 1 tsp bicarbonate of soda
  • Icing Sugar to Dust

Recipe's preparation

    ORANGE AND DATE MUFFINS
  1. Preheat oven to 200c/180c fan forced

    Line 12 hole muffin tray with paper cases

    Place pitted dates in TMX bowl chop Speed 8 for 5 seconds

    Place peeled and quartered oranges and the orange juice into TMX bowl chop Speed 8 for 10 secs

    Place cubed butter into TMX bowl heat for 7 minutes at 37c Speed 1 or until melted

    Place self raising flour, raw caster sugar, egg, bicarb soda into TMX bowl Mix Reverse Speed 2 for 20secs  until all comes together but don’t over mix

    Spoon into prepared tray bake for 15 to 20mins or until skewer inserted at centre comes out clean

    Stand in pan for 5 minutes then transfer to wire rack to cool

    Serve dusted with icing sugar

    These were so moist and yum! I didn't add in any sugar. Just a dollop of honey and a couple extra dates. Thanks for a great recipe

    Perfection.  These are the lightest, tastiest muffins I've made in a long time!  30 mini-muffins cooked in just over 10 minutes, and scoffed by my boys soon after.  You can't ask for more than that!  tmrc_emoticons.)

    WOW! These should be 5 star muffins! Subsituted caster sugar for coconut sugar and left the peel on one Orange and didn't bother with sprinkling them with icing sugar. They were divine. Loved by kidlets and adults the same. Can't wait to make again  tmrc_emoticons.)

    These were great, thanks. I left the skin on 1 orange and put in 60g of rice malt syrup instead of sugar. Big Smile

    These were fantastic. I also halved the sugar & used 100g of dates & whole meal SR flour. My kids love them. I didn't mention dates until after they had one. Now they don't care!

    Made these with3 mandarins,  100g dates and much less sugar (ca. 80g) and realised when I'd already put them in the oven that I had forgotten to put the egg in... They turned out very moist and delicious!  tmrc_emoticons.D

    Made these today. Baked on 170 degrees as I have a hot oven. 20 minutes. They were really gorgeous and light. Will be making these again.
