Ingredients:
- 200 g pumpkin, peeled, 2cm dice
- 500 g water
- 60 g Almonds Whole
- 120 g raw sugar
- Zest of 2 oranges
- 40 g Butter
- 2 eggs
- Juice of 2 oranges, approx 120ml
- 60 g sultanas
- 150 g SR flour
- 150 g Wholemeal SR Flour

1. Place pumpkin into Simmering Basket, and water into TM Bowl and cook for 20-25 minutes/ Varoma temp/speed 1.
2. Use Spatula to remove Simmering Basket, tip remaining water from TM Bowl, replace and allow to dry.
3. Preheat oven to 170 deg.C and lightly grease or paper a 20cm long loaf tin.
4. Weigh sugar and orange zest into TM Bowl and mill 10 seconds/speed 9 and scrape down.
5. Add almonds and mill 5-10 seconds/speed 7 depending upon how finely you like the nuts chopped.
6. Add butter and pumpkin and puree 10 seconds/speed 7. Scrape down.
7. Add eggs and orange juice, mix for 10 seconds/speed 4 before adding sultanas.
8. Add flour and mix for 10seconds/reverse/speed 4 before transferring mixture tio prepared tin.
9. Bake for 1 hour or more, until cooked when tested with a skewer.
10. Turn out onto a cake cooler and cover with a clean tea towel.
If serving warm, sprinkle lightly with icing sugar and slice.
If eating cold, slice and spread with Orange Butter.
