  • 1 orange, Rind and juice
  • 130 g Butter, Chopped
  • 220 g Milk
  • 2 eggs
  • 310 g Self Raising Flour, Sifted
  • 120 g caster sugar
  • 40 g poppy seeds

Recipe's preparation

  1. 1. Preheat oven to 180 degrees celcius. Prepare muffin trays - they can be lined with patty pans, or greased with butter/oil

  2. 2. Remove rind from orange and place in mixing bowl. Chop for 10-20 seconds/Speed 7. Scrape down the sides.

  3. 3. Add chopped butter and orange juice to mixing bowl. Combine 60 degrees/2-3 minutes/Speed 1

  4. 4. Add milk and eggs. Combine for 5 seconds/Speed 5

  5. 5. Insert butterfly. Add flour, sugar and poppy seeds. Mix for 10 seconds/Speed 3. Scrape down the sides of the mixing bowl and mix for another 5 seconds/Speed 1

  6. 6. Pour into prepared muffin trays and bake for 15 minutes.

    Makes approximately 18.

    These taste "healthy" by way I mean not very sweet and not very orangey lol, my kids really like them actually as they are in to more plain tastes so I will use this recipe for school snacks as they didnt have much sugar tmrc_emoticons.)

    I had smaller oranges and also based on review by MrsQ, I added juice of 2 oranges and reduced milk to 200g (I used buttermilk as I had just made butter). I also dropped sugar down to 100g. Only made 12 in my silicon muffin tray.

    Will definitely make these again and might even add more juice or rind for more orange flavour.

    These are light and fluffy, but didnt have a very strong orange flavour, I prefer a strong citrus taste, next time I'll increase the amount of orange rind and substitute some milk with more orange juice.  tmrc_emoticons.) Overall a good recipe. Thanks tmrc_emoticons.)
