Ingredients

Paleo Banana & Walnut Muffins

  • 65 g walnuts, activated if you prefer
  • 130 g raw almonds, activated if you prefer
  • 35 g Coconut Flour
  • 1 tsp bicarbonate of soda
  • 3/4 tsp ground cinnamon
  • 4 bananas, average size, ripe
  • 60 g cold pressed, coconut oil, soft or melted
  • 2 tsp vanilla extract
  • 4 eggs
  • 100 g Maple Syrup, pure

Recipe's preparation

  1. Preheat oven to 180°C.
    Grease a 12 hole muffin tin using coconut oil. (The rose gold tins from the mix-shop work perfectly!)
  2. Place walnuts into mixing bowl and chop 0.5 seconds/turbo. Place into a bowl and set aside.
  3. Place Almonds into mixing bowl and mill 10 seconds/speed 9 .Scrape down the sides of mixing bowl.
  4. Add coconut flour, bicarbonate of soda, and cinnamon and mix 10 seconds/speed 3.
    Scrape down the sides of mixing bowl.
  5. Add 3 of the bananas (broken into quarters), coconut oil, vanilla extract, eggs and maple syrup. Blend for 20 seconds/speed 4.
    Scrape down the sides of mixing bowl, and reblend if you feel neccesary.
  6. Add in 3/4 of reserved chopped walnuts (leave some to garnish the tops) and mix 10 seconds/speed 3.
  7. Divide the mixture evenly into muffin tray (they won't rise too much so to the top is fine). Slice the remaining banana into 12 diagonal slices, and place one on top of each muffin, and sprinkle with remaining walnuts.
  8. Place in oven and cook for 25 to 30 minutes, or until a skewer comes out clean and they are golden on top.
