- 150 g self-raising flour
- 85 g dessicated coconut
- 115 g caster sugar
- 100 g Butter
- 580 g condensed milk
- 125 g lemon juice
- 170 g passionfruit pulp

- 1. Preheat oven to 180"Sous-vide" . Line a deep rectangular slice tin with baking paper.
- 2. Melt butter in bowl for 3 minutes, 60"Sous-vide" , speed 2.
- 3. Add flour, coconut and sugar to the melted butter. Mix for 10 seconds,speed 4 . Scrape down bowl then mix again 10 seconds,speed 4.
- 4. Pour bowl contents into baking tray and press down to flatten the surface.
- 5. Bake in the oven for 12 minutes until golden brown. Remove tray .
- 6. Place condensed milk, passion fruit pulp and lemon juice in a clean bowl. Mix for 10 seconds on reverse speed 4. Scrape the bowl. Mix for a further 5 seconds, reverse speed 4.
- 7. Pour the mixture over the cooked biscuit base and smooth the surface.
- 8. Place tray into oven at 150 "Sous-vide" and bake for 15 minutes. Place in the fridge for 2 hours until set.
- 9. Cut with a warm sharp knife into squares ready to enjoy!
