Recipe's preparation

  1. 1. Soften butter (250g). Cut into cubes. Place in bowl 30sec/50deg/sp4

    2. Add sugar and flours. Mix sp4 until combined (approx. 1min)

    3. Add passionfruit and mix sp4 until mixture clings together (approx. 30sec)

    4. Knead 1min/Dough mode"Dough mode"

    5. Turn onto lightly floured surface and form into ball

    6. Divide dough in half and roll each half into 26cm log; wrap in plastic wrap. Refrigerate for 1 hour.

    7. Preheat oven to 160*C. Grease oven trays (not necessary for non-stick trays)

    8. Cut logs into 1cm slices; place on trays 3cm apart

    9. Bake biscuits about 20min. They will still be soft to touch, but going slightly golden. Cool on trays for 5-10min before transferring to wire rack.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    These biscuits are beautiful. I have had this recipe for a few years, I was thinking of modifying to the Thermomix, but thought I would check on the community first.
    Lucky me it was already there.
    Beautiful, buttery and passionfruity. Always a winner.

    If you want to make your own rice flour or icing sugar please do this before step 1 (See BCB for recipes).

     

    Also, we like to ice these with passionfruit icing (icing sugar and passionfruit).

     

    If using tinned passionfruit you can freeze the unused passionfruit pulp for your next batch.
