Ingredients

Base

  • 190 grams Butter
  • 120 grams raw sugar
  • 2 egg yolks only
  • 200 grams plain flour
  • 60 grams self-raising flour
  • 30 grams custard powder
  • pinch of salt

Topping

  • 120 grams brown sugar
  • 30 grams golden syrup
  • 180 grams Butter
  • 125 grams roasted unsalted peanuts

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees

    Line a slice tin with baking paper and set aside

    Insert butterfly whisk and Add raw sugar and butter to mixing bowl

    Mix for 30seconds / sp3 or until light and fluffy

  2. Scrape down sides of the bowl and add egg yolks

    Mix for 10secs / sp3

  3. Remove butterfly whisk and Add flour, custard powder and salt

    Mix for 10secs / sp5

    Scrape down sides and mix for a further 10secs / sp5 or until a firm dough is formed

  4. Spread the dough across the base of the tin with the back of a spoon until smooth

    Bake in 180 degree oven for 15minutes or until golden brown

    Meanwhile clean and dry mixing bowl

  5. Topping
  6. Place brown sugar, golden syrup and butter into mixing bowl

  7. Cook for 6mins / 80 degrees / sp1 or until butter is melted and sugar is dissolved

  8. Add unsalted peanuts and mix for 10secs / reverse / sp2

  9. Return to oven for a further 10 minutes

    Allow to completely cool in the fridge before cutting into pieces

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    I already had recipe but needed Thermomix instructions. Thank you. Forgot butterfly but it just needed another mix of butter sugar. (About 20 secs). Recipe omits to say pour caramel/peanut mixture over base before returning to oven for 5 mins. Great morning tea slice.
