Pear and Raspberry Loaf (refined sugar-free)

  • 1 Pear, skin on, quartered
  • 2 eggs
  • 250 grams Plain Greek Yoghurt
  • 1/4 cup stevia
  • 1 tsp Vanilla Paste
  • 40 grams Milk
  • 240 grams wholemeal self-raising flour
  • 45 grams rolled oats
  • 1 tsp ground cinnamon
  • 65 grams frozen raspberries, or fresh

Recipe's preparation

    Pear and Raspberry Loaf
  1. Preheat oven to 180 deg.
    Grate pear - speed 6, 4 sec. Scrape down bowl with spatula.
  2. To the bowl, add in eggs, yoghurt, milk, stevia, vanilla.
    Mix on speed 4 for 10 sec.
  3. Add the flour, oats, cinnamon and mix on speed 4 Counter-clockwise operation"Counter-clockwise operation" for 10 sec, until well combined, but try not to overwork the mix.
    Use your spatula to scrape down the bowl to ensure even mixing.
  4. Add in your raspberries and mix Counter-clockwise operation"Counter-clockwise operation" speed 2, 5 sec until they're mixed evenly throughout the bowl.
  5. Put the loaf mix into a lined or greased loaf pan and cook for 50 minutes, or until a skewer comes out clean.

Tip

You could use sugar instead of stevia.
Tastes delicious with a dollop of ricotta cheese and honey.
Freezes well so it is great for lunch boxes.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
