  • 1 tablespoons Rice Warrior Protein Powder
  • 300 grams Gluten Free Kids Chocolate Cookies, Orgran Brand
  • 45 grams Desiccated Coconut, (Plus extra for rolling)

Recipe's preparation

    Protein Coconut Balls
  1. Crush the Orgran GF Chocolate Biscuits (20 seconds, speed 6) and set aside in a mixing bowl. 

  2. Add Coconut and Rice Warrior Protein Powder.  Blend (10 seconds, speed 5).  Add the tind of Pandaroo Sweet Condensed Coconut Milk.  

  3. Return crushed mix to the above mixture.  Stir! Gentle stir setting"Gentle stir setting" gently till it is fully blended.  Optional here is adding dates or cranberries or any dried fruit.  If doing this, don't use as much biscut mix.  The final consistency should be firm, not sloppy!

  4. Using a soup spoon, remove a small amount and roll in spare dessicated Coconut.  Place in very small cupcake holders if desired.  Store in fridge.

Tip

This is a variant of the Pandaroo Chocolate Coconut Balls.  Woolworths stocks the Pandaroo Sweet Condensed Coconut Milk! Look in the Asian Food Isle near the Coconut Milk! Very Yummy!!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
