Ingredients
Pumpkin & Coconut Flour Waffles
- 1/2 cup Coconut Flour
- 3 eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup Milk of your choice
- 95 g coconut oil
- 170 g mashed pumpkin
- 2 tbsp xylitol
- 2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp Nutmeg
- 1 tsp mixed spice

- Place chopped pumpkin in the microwave and cook until soft (I use my jacket potatoes button).
Place soft pumpkin and coconut oil in the bowl and mix on sp5 for 10 seconds.
Add all dry ingredients and then the milk. Mix sp 4 for 10 seconds.
Add eggs. Mix sp 5 for 10 seconds.
Cook in your waffle machine. I think these could also be cooked as pancakes/piklets. These are a soft waffle, they don't go crispy. I have my waffle machine turned up to 3/4 darkness.

Tip
This recipe is adapted from cookieandkate.com but that recipe uses oat flour which is not LCHF compliant therefore I have made some changes.
Coconut oil could be subbed with 7 and 1/2 tablespoons of butter as per the original recipe but I am yet to test this since changing the flour. When I first made it I did 1 cup Oat flour and 1/4 cup coconut flour and the butter subsitution worked at this time.
This mixture will keep in the fridge for several days so you can make enough fresh waffles each morning for your family.
