- 100 grams raw sugar
- 2 large eggs or 3 small eggs, about 215 g weight(with shells)
- 1 teaspoon baking powder
- 100 grams Self Raising Flour
- pinch salt
- 100 grams Butter, soft

Preheat oven to 180 degrees C.
Grease 2 x 18 cm round tins and line bottoms with baking paper.
Place raw sugar into mixing bowl and mill 5 sec/speed 10’
Scrape down sides of bowl.
Place butterfly into Thermomix bowl. Add eggs and beat 8 min/ speed 4
Remove butterfly.
Scrape lid and sides of bowl if necessary.
Add flour, baking powder, salt and butter and mix on speed 3 in 2 bursts of 5 seconds. A slight scrape with spatular in between.
If not totally combined give a gentle stir before pouring into cake tins. If you overstir the air will be knocked out. Place into oven, turn temperature down to 160 C and bake for about 30 - 35 mins. or until top of cake springs back when touched gently.
Turn out onto a wire rack.
When cool sandwich together with cream, jam or your favourite filling and serve as is or decorate with fruit or whatever you fancy.
I use this sponge to make my chocolate truffles.

Tip
Can be frozen for 2 months if wrapped well.
Sprinkle with your favourite liqueur or fruit juice, add nuts, yogurt, cream whatever you fancy and turn into a decadent dessert.
Recipe can be doubled if using TM5.

Hi, just making the cake, looks like not much. Did you mine it makes 2 portions or do I have to doppel the recipe. A bit confusing. Taste good.
Very thin 2 cakes with the one times recipe and ready in 17min.
Next time I will double the recipe.

Followed the recipe and the batter was left with clumps of butter in it. Therefore mixed it further to get it smooth and cake ended up not rising at all!
doubled the recipe and it still barely made enough. Choose a different sponge cake recipe!

Ours was very thin and I'm unsure if you meant us to mix the eggs and sugar for 8 minutes or 8 seconds.
I could not divide this between 2 cake tins. Are you supposed to make 2 lots of mixture?
