Ingredients
Cake Batter
- 250 grams Butter
- 1 teaspoon vanilla extract
- 275 grams caster sugar
- 3 eggs
- 335 grams SR flour
- 180 grams Milk, 3/4 cup
- 150 grams frozen raspberries, partly thawed
- 100 grams white chocolate, broken into pieces
- 80 grams full fat pouring (whipping) cream

Preheat oven to 180 degrees C (160 fan forced). Line an 23cm round cake tin with baking paper (base and sides).
Place sugar in TM bowl with butter (if it is straight out of the fridge chop for 5 sec spd 7.)
Scrape down sides and insert butterfly add mix for 30 sec speed 4.
Add vanilla extract and mix for another 30 sec speed 4 and while doing this add both eggs in through the top while the mixture is mixing. .
Remove butterfly and then add in milk and flour for another 15 sec speed 5 scrape down sides and then mix another 15 sec speed 5 - just until the batter is smooth and creamy - don't overbeat!
Divide mixture between two small bowls. Lightly crush raspberries in another small bowl with fork; gently stir crushed raspberries into one bowl of cake mixture. Drop alternate spoonfuls of mixtures into pan. Pull skewer back and forth through cake mixture for a marbled effect.
Bake cake about 1 hour. Stand cake in pan 5 minutes before turning, top-side up, onto wire rack to cool.
Can top when cool with Butter Frosting or I am going to try a White Chocolate Ganache (recipe in EDC).
Tip
This is an adaption of the AWW Raspberry Swirl Cake I am going to try. Haven't made it yet so will update if any changes needed.
