  3. Step 1: Add all Filling ingredients to the Closed lid"Closed lid"

Mix on speed 9 for 1 min 30 seconds stopping to scrape down and help combine with your spatula ( It should look creamy)

Step 2: Pour filling on top of base, smooth out the top and cover with cling wrap or a plastic bag and place in the freezer.

Step 3: Chill for at least 2 hours or overnight before serving.

Tip

Remove this Raw cake from the freezer and place in the fridge 2 hours before serving for an easy to eat texture.

It will keep covered in the freezer for up to 2 weeks so is a great cake to make ahead of time.

Top with freshly sliced mango and finely chopped mint. Very Fresh.

I just tried to make the base. Since the recipe doesn't specify to use fresh dates, I used dried dates. It apperas that it just hasn't worked with dried. The base isn't bound at all. It's just dry and crumbly. I'm assuming that we must have to use fresh dates. I wish i'd known this before the night before my daughter's birthday party tmrc_emoticons.-(

Lovely texture. Not so sure on the taste of the coconut oil. Any suggestions on a substitute?  Cooking 7
