Ingredients
Cake Batter
- 100 g almond meal
- 70 g walnuts
- 70 g melted butter
- 60 g coconut milk
- 2 carrots
- 2 eggs
- 1 heaped tsp cinnamon
- 1 heaped tsp Nutmeg
- 1 pinch of salt
Frosting
- 130 g Shredded coconut
- 70 g Butter
- 1 lemon juice and zest
- 1 teaspoon vanilla extract

Pre heat oven to 160 degrees and line spring form cake tin.
2 - Weigh 70gms Walnuts into "Closed lid" chop for 2 seconds on speed 5.
3- Leave Walnuts in the "Closed lid" and weigh in Almond meal, Cinnamon, Nutmeg and Salt.
4 - Continue to add in Eggs and weigh in melted butter and coconut milk. Add in the chopped carrots and mix for 30 seconds on speed 5.
5 - Fill cake tin and place in oven for 35 mins.
6 - Allow to sit for 10 mins after removing from oven and allow to cool on wire rack before frosting.
1 - Clean / Wipe out bowl from batter.
2 - Weigh in 10 grams of Walnuts, chop for 2 seconds on speed 5. Set aside for decorating.
3 - Weigh in Designated Coconut and mill for 5 seconds on speed 10.
4 - Weigh in melted butter, mix 1 minute speed 4.
5 - Add lemon juice and zest , Vanilla extract and 1 ice cube (optional) mix for 1 minute speed 4.
6 - When cake has cooled ice cake and sprinkle chopped walnuts on top.

Tip
TIPS;
* if you find frosting too tart, add 1 tablespoon of honey to mixture in step 5.
* if your cake starts to brown too much in oven place foil over the top and continue to bake.
* adding 1 ice cube in the frosting mixture helps smoothen it out, this is option.
