Ingredients
Rhubarb filling
- 100 g rhubarb, roughly chopped
- 40 g raw sugar (or to taste)
- 30 g water
Biscuits
- 90 g raw sugar
- 250 g unsalted butter, chopped
- 1 tsp vanilla extract
- 90 g cornflour
- 240 g plain flour
Buttercream filling
- 120 g raw sugar
- 50 g Butter

Preheat oven to 160 degrees C.
Place rhubarb, sugar and water into TM bowl. Cook 6 mins 100 degrees speed 2. Strain in basket and set aside to cool. Wash and dry TM bowl.
Mill sugar 30secs speed 10. Add butter and vanilla and cream 60 sec speed 4-5 (or until light and fluffy). Add cornflour and plain flour and mix 15 sec speed 4-5. Scrape sides then mix another 5 sec speed 4-5.
Bake in preheated oven for 20 mins or until slightly golden.
Mill sugar 30 secs speed 10. Add butter and mix 40 sec speed 4.
Spread a little butter cream on one biscuit, rhubarb on another and sandwich together. Repeat with all biscuits.
