Ingredients

Cake Mix

  • 155 grams dark chocolate
  • 70 grams Butter
  • 145 grams white sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla essence
  • 3 eggs

Ganache

  • 3/4 cup coconut flakes
  • 1/2 cup heavy cream
  • 1 cup dark chocolate

Recipe's preparation

    Cake Mix
  1. Preheat oven to 190°c. Prepare 8inch pan with baking paper. 

     

    Combine 155g dark chocolate and 70g butter to Thermomix bowl. Melt together 1.5 minutes 45°c speed 1.5. Keep an eye on this to ensure chocolate doesn't melt. Scrape sides of bowl. 

     

    Add sugar, salt, vanilla essence and eggs. You can slo add 1tsp of espresso powder if desired. Beat until smooth. 30 seconds speed 2.

    Add 50g cocoa mix 30 seconds speed 3 until just combined.

    Pour batter into prepared tin. 

    Bake 23-25 minutes. Bake longer if required. Ok if the skewer comes out slightly cakey. Let cake stand in off oven for a bit longer. 

    While the cake is baking, spread coconut flakes over a baking tray and toast for approx 5 minutes or until golden/toasted. 

    While cake is cooling prepare ganache.

  2. Chocolate Ganache
  3. Combine 1 cup chocolate and 1/2 cup cream. Heat until cream is hot but not simmering. (I actually do this in microwave to avoid having to clean TM bowl twice). Mix until thickened. When cake is cooled, add ganache and top with coconut flakes/nuts while ganache is still wet. 

    Serve with ice cream/cream.

Tip

This cake is very rich. Best served as a small slice, even for the sweet tooths! Can be made with 2 eggs and can probably decrease sugar.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
