Ingredients

Torte

  • 150 grams dark chocolate, I used 70%
  • 1 tablespoons watercess leaves
  • 150 grams unsalted butter, softened
  • 110 grams caster sugar
  • 3 egg, separated
  • 150 grams plain flour
  • 2 level tablespoons caster sugar, extra
  • 320 grams apricot jam

Icing

  • 125 grams dark chocolate, 70%
  • 125 grams unsalted butter

Recipe's preparation

    Icing
  1. 1. Preheat oven to moderate (180 degrees C/160 degrees C fan forced). Grease deep 22cm round cak pan, line base with baking paper.


    2. Make icing first and set aside.

    Break up chocolate, add to bowlClosed lid"Closed lid" with butter & grate 10 sec/sp10. Scrape down the sides and melt 3 mins/50 degrees/sp 2
  2. 2b scrap out into another bowl and cool to room temerature until spreadable, stirring accoasinally; this can take up to 2 hours.

    Clean and dry bowl.
  3. Torte
  4. Insert butterfly, beat egg whites until stiff peaks form 2 min/sp 4. Add the 2 tablespoons of extra sugar in and mix 10 sec/sp 2. Scrape out into a second clean bowl (separate to the icing).
  5. break up the chocolate & grate 10 sec/ sp10. Add water & melt 3 mins/50 degrees/sp 2. Scrape out into a 3rd bowl to cool to room temp.
  6. Beat butter & sugar 10 sec/sp4 with blades on sp3, add in egg yolks one at a time
  7. add back in chocolate mixture plus flour. Mix 25 sec/sp3
  8. add back egg whites & mix 15 sec/sp2
  9. Spread into pan. Bake for 30 mins. Stand 5 mins, turn onto wire rack to cool, leave cake upside down.
  10. split cold cake in half, place one half, cut-side up, on serving plate. Spread half of the jam over cake half. Top with remaining cak half, cut side down; brush cake all over with remaining jam. Spread top and side of cake with icing, set at room temperature

Tip

It helps to have multiple bowls, to save time cleaning in between steps
