Ingredients

Salted Cashew and Coconut Slice

  • 400 grams Raw Cashew Nuts, unsalted
  • 200 grams dessicated coconut, plus extra for sprinkling on top
  • 150 grams Rice malt syrup, or 100g of pure maple syrup
  • 100 grams coconut oil
  • 3 level teaspoons vanilla essence
  • 1 pinches sea salt flakes, or salt of choice

Recipe's preparation

  1. 1. Place nuts into the mixing bowl. Chop 10 secs/speed 7.
    2. Add all the other ingredients accept for the salt and extra coconut for the topping. Combine 30 secs/speed 7.
    3. Scrap down the side of the bowl and check to see that the mixture is combined well. Combine for an extra 10 secs/speed 7 if necessary.
    4. Press the mixture into a slice and store container. Sprinkle with sea salt flakes and cover with the remaining coconut.
    5. Chill for at least 1 hour before cutting and serving.

Tip

These can also be rolled into balls, coated in coconut and stored in the fridge. Just make sure the salt is added along with the other ingredients.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
