Ingredients

Paleo Apple Cake

  • 125 grams almond meal, (you can mill your own)
  • 30 grams tapioca flour
  • 60 grams Rice malt syrup, or honey, coconut sugar or maple syrup
  • 1 egg
  • 50 grams olive oil
  • 1/4 level teaspoons ground cloves
  • 1 level teaspoons ground cinnamon
  • 1 level teaspoons natural vanilla extract
  • 3 Pink lady apples, cored and cut into halves
  • 1/2 level teaspoons salt
  • 1/2 teaspoons bicarbonate of soda

Topping

  • 1 level teaspoons ground cinnamon
  • 60 grams Chopped walnuts, or chopped pecans
  • 50 grams Coconut sugar, or brown sugar

Recipe's preparation

    Making the cake
  1. Pre-heat oven, 180 degrees. Grease and line an 8 x 8 cake tin.
  2. Place apples into mixing bowl and chop 3 secs, sp 5. Scrap down the sides of the bowls and repeat.
  3. Add all other ingredients cake ingredients. Mix on sp 5 for 10 seconds. Scrap down the sides of the bowls. Ensure the mixture is combined. Mix for a further 5 seconds if necessary.
  4. Pour mixture into cake tin. Top with the topping ingredients - chopped walnuts or pecans, ground cinnamon and the coconut sugar.
  5. Place into oven and cook for 25-30 mins, or until the cake feels spongy and a skewer can be cleanly inserted and removed. The cake should still be moist. Allow the cake to cool in the pan before removing. Serve with whipped cream or icecream.

    Well, this is a great success! Tastes delicious! We had it with coconut yogurt! It was so nice to see a recipe that used rice syrup! I'm not using any form of ground sugar anymore, just trying to substitute rice syrup as it is so low in fructose!
    For the topping, I ground pecans plus a few walnuts and then added some shredded coconut and my granola as a substitute for the coconut or brown sugar! I also added some rice syrup! It worked so well.
    The recipe was speedy to make (a big plus in my book)! As I have a TM5, it's a shame I can't save it to Cookidoo!
