Ingredients
Spiced Apple Loaf
- 2 apples, peeled and cored
- 225 grams self-raising flour
- 110 gram brown sugar
- 55 grams coconut oil
- 63 grams milk powder
- 1 tsp cinnamon, Ceylon
- 0.5 tsp ground nutmeg
- 1 tsp ground ginger
- 2 eggs
- 1 pinches salt
- 50 grams walnuts

- Preheat your oven to 180°C (350°F) and grease or line a loaf tin with baking paper.
- Add peeled and cored apples to the Thermomix bowl.
Chop 5 sec / Speed 5.
Transfer grated apples to a separate bowl and set aside. - Add brown sugar (or honey), eggs, coconut oil, milk (prepared from powder), and vanilla extract to the Thermomix bowl.
Mix 10 sec / Speed 4. - Add SR flour, cinnamon, nutmeg, ground ginger (if using), and salt.
Mix 10 sec / Speed 4.
Scrape down the sides of the bowl and mix for another 5 sec / Speed 4, if needed. - Add the grated apples back to the Thermomix bowl.
Add Walnuts
Mix 5 sec / Reverse / Speed 3. - Pour the batter into the prepared loaf tin and smooth the top with a spatula.
Bake for 40–50 minutes, or until a skewer inserted into the center comes out clean. - Allow the loaf to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
