Muffin mix

  • 2 Apples, quartered
  • 180 grams Milk
  • 1 egg
  • 75 grams Butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoon baking bowder
  • 1/2 teaspoon ground cloves
  • 2 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 100 grams brown sugar
  • 100 grams rolled oats
  • 120 grams flour

Recipe's preparation

  1. Preheat oven to 180 degrees celsius and line a muffin tray (12-15 regular sized muffins)

    Place quartered apple in bowl and chop 2 sec, speed 5.

    Add egg, milk and melted butter (I just melt in microwave). Mix 4 sec, reverse, speed 2.

    Add all dry ingredients, mix 5 sec, reverse, speed 3 or until combined.

     

    You may need to add 1-3 tablespoons extra milk to make a good batter consistency, depending on the apples used.

     

    Spoon batter into prepared muffin cups and bake for 12-15 minutes until the tops spring back when lightly pressed.

     

    Great for lunchboxes or after school snacks, or even a quick breakfast on the go.

    Tasty, but I wouldn't use 2 tsp cinnamon again. Too overpowering. Will reduce to 1 tsp next time. I peeled the apples, as recommended in a previous comment.

    Just made a batch of these for the freezer. They're light, moist and delicious! Next time I think I'll peel my apples though. Great recipe, thanks!

    this are really nice, they took a little longer to ook than recommended but otherwise a nice afternoon snack that the rest of the family loved. Although next i make them I'm going to leave the apple a little more chunky.
