Recipe's preparation

  1. Place almonds into bowl and grind 10 seconds speed 9. Set aside.

  2. Place sugar in the mixing bowl and grind 10 seconds speed 9. Remove from bowl and then tip 65g back in to the bowl.


    Add butter to the bowl and mix 20 seconds speed 6. Scrape down side of the bowl and mix 10 seconds speed 6..

  3. Add flour, almond meal and 1 tsp cinnamon to the bowl and mix 20 seconds, speed 6 using the spatula to encorporate. Check that a dough has formed. if not mix another 10 seconds, speed 6.

  4. Roll teaspoons of mixture into a ball, place onto prepared baking trays leaving space between biscuits to allow for spreading. Bake at 180 degrees for 14 - 16 minutes or until firm to touch or light in colour.

  5. Mix the remaining icing sugar with 1/2 tsp cinnamon in a bowl. While biscuits are still hot, roll the biscuits in the spiced icing sugar and place on a wire rack to cool.

Tip

You can use plain flour if you don't need the biscuits to be gluten free.
