Recipe's preparation

  1. 1.       Place sugar into TM bowl. Make into caster sugar by mixing 2 seconds/speed 9.

    2.       Add butter to TM bowl. Cream butter and sugar together on speed 4 for approximately 20-60 seconds, until butter is light and fluffy. Keep an eye through the hold in the top to know when it’s mixed together.

    3.       Add vanilla and egg to the TM bowl. Mix for 10 seconds/speed 4.

    4.       Put a mixing bowl on top of the TM to weigh the flour. Add the baking powder to the flour, and mix using a whisk to break up any clumps.

    5.       With the blades running at speed 4, slowly add the flour and baking powder mixture through the hold in the top of the lid.

    6.       Separate the dough into two parts. Add a few drops of food colouring to each part, e.g. in the photo I’ve made one dough green and left the other dough plain, so my cookies are green and plain swirls.

    7.       Roll out one of the dough into a large rectangle approximately 1/2cm thick between two sheets of baking paper. Place in the fridge to chill for approximately one hour. Repeat with the other dough: roll it out to a similar sized rectangle between two sheets of baking paper and put in fridge to chill.  

    8.       After they have been chilling in the fridge for an hour, take both doughs out of the fridge. Remove the doughs from the baking paper and place one dough on top of the other. Roll the doughs together into a log along the long edge. Wrap the log in baking paper and place back in the fridge for approximately an hour to chill.

    At this stage, you can freeze the dough if you are not wanting to bake it straight away.

    9.       After the log has been in the fridge for an hour to chill, remove it from the fridge. Pre-heat your oven to 180*C. Place the log on a cutting board and cut the log into cookies. Place the cookies onto a baking tray and bake for 12-15 minutes, or until lightly golden.

     

    10.   Once the cookies are baked, remove them from the oven and place them onto a wire rack to cool. You can also freeze the cookies once they have cooled. 

Tip

-You can freeze the dough once it is rolled in a log, and then bake it at a later time. To bake it, set it in the fridge to defrost slightly before slicing and baking the cookies

-Once the cookies have baked and cooled you can also freeze them 

-Instead of adding food colouring, you can add 1 TBSP cocoa powder and make choc-sprial cookies

-You could even do three different coloured doughs if you wanted to make the cookies even more colourful
