Ingredients
Muffins
- 110 gram dates
- 1 Large carrot
- 200 gram Wholemeal lour
- 2 tsp baking powder
- 50 gram dessicated coconut
- 110 gram Butter
- 3 tsp ground mixed spice
- 110 gram Sultana's
- 1x Grated zest of 1 orange
- 2 tbsp orange juice
- 2 eggs
Topping
- 200 g cream cheese, or mascarpone
- 100 g dates
- zest & juice of 1 orange or lemon

Preheat oven to 150 degrees Celsius.
Grease Mini muffin trays or line 20cm round cake tin and set aside.
Place dates into bowl and chop for 10 seconds on speed 7. Set aside
Place carrot into bowl and chop for 4 seconds on speed 5. Set aside with dates
Place butter into bowl and melt the chopped butter at 90 degrees on speed 1 for 2 minutes.
Add all ingredients, except sultana's, dates and carrot into bowl (flour, baking powder, coconut, mixed spice, zest of orange, orange juice and the eggs) and mix for 10 seconds speed 5
Add sultana's, dates and carrot and mix on REVERSE for 15 seconds on speed 3 or till everything is mixed
If necessary, scrape down sides of bowl and mix for a few more seconds
Pour into mini muffin tays and bake for 25 minutes or until done
OR Pour into cake tin and bake for 45-60 minutes for cake.
ICING
Put dates into bowl and chop 10 seconds speed 7.
Add other ingredients into bowl and mix for 20 seconds on speed
Ice cake when it has cooled.
CAKE
Tip
I also sometimes add 50 gr of chopped nuts (walnuts / pecans or some other nuts) I add them add them at the same time as sultana's, dates & carrots.
