Ingredients

- 1/2 small red onion
- 25 gram Butter
- 180 gram plain flour, (I've also made them with GF flour)
- 1.5 tsp baking powder
- 1/8 tsp cayenne pepper, (my kid loves a little bit of spice, can be left out or reduced)
- 110 gram Milk
- 60 gram Baby Spinach Leaves
- 130 gram grated cheese
- 1 egg

Pre-heat oven to 160°C.
Spray mini muffin tins with olive oil spray.
**If you have to grate your cheese put it in TMX bowl on speed 8 for 6-8 seconds and set aside.**
Put red onion in TMX bowl and chop for 3 seconds, speed 6.
Add butter to TMX bowl and sauté for 3 minutes, 100 degrees, speed 1 (MC OFF)
Add ingredients to TM bowl in this order (to avoid eggs cooking, or cheese melting on hot onion mix):
flour, baking powder, cayenne pepper, milk, spinach, cheese and then eggs.
Mix on speed 5 for 7 seconds and then on speed 5 for 10 seconds "reverse" or till all flour lumps disappear.
If necessary, scrape down sides of bowl and mix for a few more seconds.
Pour into prepared muffin tins and bake for 15-20 mins, or till knife comes out clean.

These were super easy and quite tasty. I told my 4yr old they were Shrek muffins and he loved them!
Made these today in a regular muffin tin. Made 12 they were delicious, almost all devoured. I used wholemeal flour and added a bit of goats cheese as well because I didn't have enough spinach... Thank you!
