Ingredients:

  • 110 grams raw sugar
  • 110 grams brown sugar
  • 130 grams Butter, cubed
  • 50 grams sunbutter
  • 1 teaspoon vanilla essence
  • 1 egg
  • 260 grams Self Raising Flour
  • pinch salt
  • 100 grams chocolate, melted, optional

Recipe's preparation

    Method:
  1. 1. Preheat oven to 190 degrees.

    2. Mill sugar, 10secs/speed 9.

    3. Add brown sugar, butter, sunbutter and vanilla.  Cream together 1min/speed3-4.

    4. Set TM to 30 secs/speed 4, and tip egg through hole in TM lid.

    5. Scrape down sides with spatula and mix 10secs/speed 3-4.

    6. Add SR flour and a pinch salt. Knead 40secs/interval speed.

    7. Using a plastic spoon, take out a teaspoon-sized ball of dough and flatten with a fork dipped in flour. Place on a baking tray lined with baking paper. Ensure dough balls are spread out, as biscuits will expand a lot when baking!

    8. Bake 8-10mins or until lightly golden brown. Less time for chewy biscuits, more time for crunchy biscuits.

    9. Allow to cool 5 mins on baking tray, before removing to a cooling rack.

    10. Once cool, drizzle with melted chocolate, or dip a half biscuit into chocolate and place on baking paper until chocolate is set.

    Yum! A lovely alternative to any cookie containing chocolate! Kids loved the idea that they were 'safe' to take to school too.

    Best biscuits I've done in the thermo. I used peanut butter as a sun butter alternative, can't go in lunch boxes but kids were honestly excited for it to be their after school treat. Amazing texture & flavor. Thrilled I made these.
