- 170 grams Brown Rice Syrup
- 1 teaspoon fine sea salt
- 1 teaspoon ground cinnamon
- 75 grams dried cranberries
- 35 grams sesame seeds
- 45 grams Desiccated Coconut
- 175 grams sunflower seeds

Place the coconut oil in the TM bowl and mix for 2.5 minutes at 50 degrees, speed 1, or until the coconut oil has melted.
Add the brown rice syrup, salt and ground cinnamon, and mix for 1 minute at 50 degrees, speed 1.
Add cranberries, sesame seeds, desiccated coconut and sunflower seeds and mix "Counter-clockwise operation" 15 seconds at speed 3.
Use a spatula to scrape down the sides of the TM bowl and mix again "Counter-clockwise operation" 15 seconds at speed 3.
Pour the mixture onto a rimmed baking sheet lined with baking paper, and spread it out flat with an oil-greased spatula.
Bake for 15-20 minutes at 170 degrees C, or until golden.
Allow to cool completely on the baking sheet before breaking/cracking the brittle into pieces.
Tip
Cranberries may be substituted with currants or other dried fruit of preference.
Will keep for up to 2 weeks at room temperature if stored in an air-tight container.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
