1 small cooked sweet potato
- 1 small piece Sweet Potato., Cooked
- 1 apple, Cut and quartered
- 3 eggs
- 120 grams Cashew Butter
- 2 tablespoons Butter, Melted
- 2 tablespoons Coconut Flour
- 1 tablespoons organic Maple Syrup, (Optional)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

Line a muffin or cupcake tray with papers. Preheat oven to 180degrees
Melt the butter
cook the Sweet Potato
I placed the coconut flour, cinnamo, baking soda, baking powder and salt in a small bowl and mixed together with fork
place apple and cooked sweet potato into the TM bowl.
chop for 3 seconds speed 4
scrape down sides.
add the remaining wet ingredients. Eggs, cashew butter, maple syrup and Vanilla.
mix together 10 seconds on "Counter-clockwise operation" speed 3
Add in prepared dry ingredient to TM bowl and mix for 10seconds (or until combined) "Counter-clockwise operation" speed 3
using a spoon or ice cream scoop mixture into each prepared paper cup.
place into oven for approx 15mins. Keep an eye on them depending on your oven. They will rise and be super fluffly to the touch.

Tip

These are super light and fluffy!!
I cooked the sweet potato in the microwave for 2mins with some water to soften it.
I preferred chunkier apple pieces so if you want a finer mix of apple and sweet potato mix again for a few seconds until you are happy.

I am yet to try but think it will work substitute sweet potato for bananas

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
