Recipe's preparation

  1. 1. Place eggs into bowl and beat the eggs until creamy on speed 3 for 10 seconds without MC.

    2. Slowly add the sugar through the hole in the lid until well mixed.

    3. Add the flour and vanilla essence in the same way.

    4. Add the baking powder in the same way and pour into a greased shallow baking tray.

    5. Bake in a preheated 180 deg oven for 10-12 minutes until light brown and risen.

    6. When a little cooler, spread with apricot or strawberry jam and roll carefully using the baking paper underneath.

    7. Sprinkle with sugar and slice and serve.

    I made this with my mum as i was looking for something similar to her old recipe she used to make.

    It wasnt as fluffy or light as her old school one but still tasted delicious.

    It only needed to be cooked for 8 minutes, any longer and i think it would have gone dry and tough. My mum laid out sugar on a tea towel, upended the sponge onto the sugar, removed the paper and rolled it instantly to give the sugar time to almost melt into the sponge. After about 10 minutes she unrolled it, spread with jam and then rolled it back up again. This worked perfectly and there was a beautiful crust all the way around the Swiss roll.

    Did not work well in TM5 for me, was dry and tough.  Will keep experimenting
