Ingredients

Thai Steamed Pumpkin Pudding

  • 450 grams pumpkin
  • 120 grams rice flour
  • 30 grams tapioca flour
  • 100 grams Shredded coconut
  • 120 grams Sugar (Raw)
  • 280 grams coconut milk
  • 1/4 teaspoons salt

Recipe's preparation

  1. Peel raw pumpkin, slice into 5 cm pieces and place into the TM Basket

    Add 500 grams water to the bowl and place TM Basket in the bowl.

    Steam 20 mins/Varoma/speed 1.

    Lift basket and allow pumpkin to cool slightly. Discard water from the bowl.

     

  2. Add cooled pumpkin to bowl and process 10 secs/speed 7 or until the pumpkin is fully pureed.

    Scrape down.

    Add rice and tapioca flours and mix 10 secs/speed 4.

    Scrape down and repeat.

    Add sugar, 50 grams of shredded coconut and the salt. If you want it to be really sweet you can double the Sugar to 240 grams.

    Replace the lid and blend for 3 minutes/80 degrees CCounter-clockwise operation"Counter-clockwise operation" /speed 4 while slowly adding the coconut milk through the lid opening.

     
  3. Pour mixture into a 20cm round baking tin.

    Sprinkle the remaining 50 grams of shredded coconut on top.

    Clean the TM bowl and then add 500 grams of water. 

    Place the Varoma dish on the lid and sit the baking tin with the pumpkin mixture into the dish. It should fit snugly. Steam 30 mins/Varoma/speed 1.

  4. After 30 minutes life the Varoma dish off and place somewhere to allow the pudding to cool. The pudding should have set like a baked custard. Once cooled it can be cut into slices.

Tip

Great way to disguise pumpkin! You can add more sugar, or less sugar depending on taste. It can also be served slightly warm as a dessert.

    Beautiful dessert
    Last week a friend of mine brought this beautiful dessert to our other friend's house.
    We all looovvveeeddd this pumpkin pudding and asked for the recipe.

    This is a totally declicious puddind and a great way to use up a whole pumpkin. I used arrowroot instead of tapioca and it turned out beautifully. I didn't have coconut milk so used coconut cream and it was fine. I will definitely make this again as it's a great way to add veges to the family diet and kids think they're getting a treat.

    This is delicious.  I added the zest of one lemon and 1 1/2 teaspoons of ground ginger.   I think the 120 grams of sugar is perfect.  First time I made it i used all cornflour.  it was much firmer than it was supposed to be and still very yummy.  now I use 100g of rice flour and 50g corn flour.  next time I make it I'm going to add some well drained pinapple rings and make sure they are well crushed.  If it gets the thumbs up I will post a variation for this.

    I didn't have Tapoica flour so after much deliberating ( google couldn't help!) I used self raising flour. I found the recommended amount of sugar to be more than sufficient and would suggest a little less ( or perhaps a smaller serving portion) kehehe. Ultimately I loved this easy pudding. Way to yummy......... This is an easy to follow step guide but I wish it had of included milling the rice before I dirtied the bowl. Speed 9 for 30 secs. Thanks for posting this great recipe. Yum yum tmrc_emoticons.)
