The perfect lemon tart
Dough
- 10 grams sugar
- 55 grams Butter
- 160 grams plain flour
- 1 tsp baking powder
- 1 tsp cinnamon sugar
- 1 --- egg yolk, (save white for filling)
- 1 lemon zest, grated
Lemon Curd
- 200 grams sugar
- 210 grams Milk
- 2 eggs
- 1 reserved egg white
- 10 grams cornflour
- 2 lemon zest, grated
- 130 grams lemon juice

- - Preheat oven to 180 degrees (Fan forced)
- Lightly butter a pie dish and set aside
- Add lemon zest and sugar to your TM bowl and grate for 15 seconds on speed 9
- Add the remaining dough ingredients to your TM bowl
- Mix for 7 seconds on speed 6
- Place TM on knead function for 40 seconds while simultaneously pouring 6 teaspoons of water through the mixing bowl lid
- Once kneading is complete, pour your dough into a pie dish and press the pastry to fit the pie dish with your hands (you can roll it out with a rolling pin but the pastry is very delicate and I find it easier to just press it with my fingers).
- Once pastry is pressed into pie dish place a sheet of baking paper down over the pastry and either add rice or a glass measuring cup to avoid the pastry rising whilst baking.
- Then bake for 20 minutes until golden brown (you may only need 15 minutes depending on your over strength) - - Add all curd ingridents to your TM (I don't rinse the TM bowl after making the dough because I don't think its necessary!)
- Once all ingridents are in the TM bowl, mix for 7 minutes at 85 degrees on speed 4.
- Now pour all of the Lemon curd into the reserved pastry tin (it's fine if it's still hot!)
- Leave to cool completely out of fridge, then place in fridge for at least 2 hours as it tastes best when its a little chilled!
