Ingredients

Mrs Woo's Banana Cake

  • 230 g plain flour
  • 1 tsp baking powder
  • 1 tsp Bi-carb soda
  • 2 tsp mixed spice
  • 125 g Butter, cubed
  • 125 g raw sugar
  • 3 Bananas, large, ripe
  • 2 --- Eggs, room temperature
  • 2 tbsp Milk
  • 1 tbsp lime juice

Recipe's preparation

  1. Preheat oven to 180C.
    Grease a ring tin or 20 cm round cake tin.
    Add flour, baking powder, bi-carb soda and spice to Thermomiix bowl. Turbo/I min x 2.
    Set aside.
    Add sugar to bowl and mill 10 sec/sp 10.
    Add butter and mix 20 sec/sp 4.
    Add bananas, eggs, milk and lime juice and mix for 20 sec/sp 4.
    Add in reserved sifted dry ingredients.
    Mix for 10 sec/sp 4 or until incorporated fully. Use spatula if necessary.

    Cook in moderate oven for 40 minutes. I use a ring tin normally and a Kugelhopf tin when I make the larger quantity. The recipe can be successfully doubled in the TM6.

    ICING OPTIONS
    Ice with cream cheese icing with a little added lemon juice and rind.
    Leave plain and butter slices.
    Ice with Lemon Icing.
    Top with melted butter and cinnamon while still warm and serve straight away.
    Serve warm with butterscotch sauce as a dessert

Tip

* If using frozen bananas, allow to defrost first.
* Substitute cinnamon for mixed spice and add the grated rind of an orange.
* Use buttermilk in place of milk.
* Add choc chips, grated orange rind and chopped dates for Ambrosia Cake
* Make in muffin tins.

    Banana cake- good taste and texture.

    I halved the sugar.It turned out sweet enough.

    Next time I will leave out bicarb and mixed spice( and substitute with baking powder and cinnamon) as the colour of the cake was too brown for my liking.

    To simplify the steps, I sifted all the dry ingredients first, putting them aside.

    Then beat the butter and sugar, adding eggs and liquid. Then mixed dry ingredients in.

    When doubling the recipe, the bowl of TM 31 will be filled to the max. 

    Recipe makes one standard sizes loaf tin.

    This is so good! I've made it three times now and it's great, especially using the mixed spice/orange zest variation and with cream cheese icing! Still very banana-ey but with a twist. Fits perfectly into a loaf tin if you want to make it as a banana bread instead.

    I baked using a ring tin and added 3/4 cup of cadbury's white chocolate melts, truly yummy!

    Yum! Used a ring tin and iced with cream cheese icing.

    This recipe was named after a mother at my nephew's school in Perth brought the cake to a morning tea at the school. My nephew is now over 40 and this is still our family's very favourite Banana Cake.
