Ingredients

Sweet and Savoury Curried Sausages

  • 600 g Beef Sausages
  • 1 onion, quartered
  • 25 g olive oil
  • 1 tbsp curry powder, I use Clive of India. use less if desired.
  • 300 g liquid stock, vegetable, or 300g water, 2 Tbsp Vegetable Stock Paste
  • 3 tbsp fruit chutney
  • 1 lemon, juice and zest
  • 1 carrot, diced
  • 1 green apple, peeled, cored and diced
  • 20 g tomato paste
  • 20 g tomato sauce
  • 60 g frozen peas
  • 60 g frozen corn kernels
  • 100 g Frozen beans
  • 2 tbsp corn starch, mixed with a little water to make a slurry

Recipe's preparation

  1. Place onion and oil into bowl and chop 2 seconds/sp 5.
    Scrape down and add curry powder and saute 4 min/100/sp soft
    Add stock, chutney, lemon zest and juice, carrot, apple, tomato paste and tomato sauce and cook 25 min/100/R/sp 1/basket on top.
    Add frozen vegetablesand stir with spatula to incorporate. Add corn starch mixture and cook a further 5 min/100/R/sp soft/basket on top.
    Place into Thermomix Server to keep warm.
    Don't clean bowl.
    Add 1000g water to the bowl and place sausages in both Varoma bowl and tray.
    Cook 17- 20 min/Varoma/sp 2.
    Remove carefully, placing onto Varoma lid to prevent drips. When cool enough to handle, dice into bite sized pieces and add to sauce. Test for seasoning.
    Serve with rice or mashed potatoes.

Tip

While sausages are cooking you could have rice or diced potatoes cooking in the steaming basket.

For a Malaysian style Curried Sausages, use a Malay Curry Powder, replace water with coconut milk, lemon with lime and serve with salted peanuts and shredded coconut.

I often bake my sausages whilst sauce is cooking. Generally because I cook a lot more for lunches and snacking!
