Ingredients
Pork
- 800 g pork scotch fillet steaks, cubed
- 1 egg, lightly beaten
- 4 tbsp corn starch
- 1 tsp Chinese Five Spice
- 1/2 tsp Bi-carb soda
- 1/2 tsp salt
Rice
- 200 g Jasmine rice
Sweet & Sour Sauce
- 2 garlic cloves
- 2 cm piece fresh ginger, sliced
- 20 g peanut oil, or use olive oil
- 120 g tomato passata
- 2 tbsp tomato paste
- 30 g soy sauce
- 80 g rice wine vinegar
- 70 g sugar, or sweetener of choice
- 1 cans pineapple piece, canned, in natural juice, 440g
- 1 brown onion, cut into pieces
- 200 g Capsicum, red and/or green, in chunks
- 1 carrot, cut into strips
- 2 stalks Celery, sliced diagonally
- 1 tbsp cornstarch, extra

- Preheat oven to 230 C, FF
Line a baking tray with baking paper and spray with oil.
Place corn starch, five spice and seasonings into small bowl.
Place a large bowl onto mixing bowl lid and weigh pork into it.
Add egg and mix together.
Add cornstarch mix to the pork and mix well.
When oven is hot, place pork pieces onto baking tray in one layer.
Spray with oil.
Bake 15 minutes. Stir around and bake a further 15 minutes.
Meanwhile, make the sauce
Set meat aside in ThermoServer until sauce is ready. - Place simmering basket onto mixing bowl lid and weigh rice into it. Rinse well and set aside.
- Place garlic and ginger into mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
Add oil and sauté 3 minutes/Varoma/sp 1/MC off.
Add tomato passata, tomato paste, soy sauce, vinegar, sugar, pineapple and reserved 50g juice, onion, capsicum carrots and celery and cook 8 min/120°C/R/speed 1/MC on.
Add a little water or pineapple juice to extra corn starch to make a paste.
Add to bowl and cook 2 min/100°C/R/speed 1 - Don't wash bowl.
Place 1000 g water into mixing bowl, insert simmering basket with rice.
Cook 15 min/Varoma/speed 4.

Tip
The sauce on its own is a fabulous base for any protein. Chicken would work just as well, but would need 2 x 10 minutes in the oven.
Serve Sweet and Sour Pork with rice on the side. Decorate with sliced spring onion.
Add snow peas, baby corn, bamboo shoots in the last 2 minutes of cooking.
If the meat is a tougher cut, such as shoulder, velvet it first. Add 1 tsp bi-carb soda to the meat cubes. Leave for an hour, rinse and dry.

Made this again last night. It's so good! I could only get thinly sliced pork steaks, so I cut them into strips. Worked just as well, though only needed 2 x 10 minutes in the oven.
