Ingredients

Cake

  • 250 grams walnuts
  • 400 grams carrots, Washed and roughly chopped
  • 3 eggs
  • 160 grams raw sugar
  • 160 grams EVOO (olive oil)
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3/4 tsp mixed spice
  • 80 grams dates, Pitted
  • 200 grams plain flour
  • 1 tsp bicarb soda

Icing

  • 70 grams icing sugar
  • 370 grams cream cheese
  • 1 to taste lemon juice, from 1 lemon

Recipe's preparation

    CAKE
  1. Preheat oven to 185 degrees celsius.

    Grease, flour and line 25cm round cake tinline with baking paper, and set aside.

    Place walnuts into bowl and mill for 2 seconds on speed 6 - then set aside.

    Place carrots into bowl and chop for 4 seconds on speed 5 - then set aside with walnuts.

    Place eggs, sugar, dates and oil in bowl and mix for 5 seconds on speed 5.

    Add vanilla, spice, salt, flour and bicarb to bowl and mix for 10 seconds on speed 5.

    Add carrots and mix on REVERSE for 15 seconds on speed 2.

    Add walnuts and mix on REVERSE for 25 seconds on speed 2.

    Mixture may need additional mixing with spatula to fully blend

    Pour into cake tin and bake for 75 minutes.

    Allow to cool on cooling rack.

  2. ICING
  3. Combine cream cheese, icing sugar, and 3 teaspoons of lemon juice ingredients in bowl and mix for 20 seconds on speed 6.

    Scrape down sides with spatular.

    Add additional lemon juice to your desired taste, and mix for 15 seconds on speed 6.

    Ice cake once cooled.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
