Ingredients

Base Layer

  • 130 grams raw cashews
  • 12 Dates (medjool), Pitted
  • 60 grams coconut oil, Melted
  • 30 grams raw cacao powder

Middle Layer

  • 90 grams raw cashews
  • 20 grams Shredded coconut
  • 260 grams Raspberries fresh, Or frozen
  • 125 grams Rice malt syrup
  • 20 grams coconut oil

Top Layer

  • 90 grams coconut oil
  • 30 grams raw cacao powder
  • 75 grams Rice malt syrup

Recipe's preparation

    Base Layer
  1. 1. Place all ingredients in thermomix bowl and blitz for 20 seconds/speed 7.
  2. Add mixture into a lined tin, smooth out and place in freezer to set.
  3. Middle Layer
  4. Place all ingredients into thermomix bowl and blitz for 10 seconds/speed 8
  5. Add to the base layer and smooth out. Place back in freezer for at least an hour to firm up.
  6. Top Layer
  7. Melt the coconut oil in the thermomix. 100 degrees for 2 minutes/Gentle stir setting"Gentle stir setting" .
  8. Add the rice malt syrup and mix for 3 seconds/speed 4.
  9. Add the cacao powder in and mix for 10 seconds/speed 5.
  10. Pour over middle layer and smooth over with a spoon.
  11. Place back in freezer until completely set (around 1 hour).

Tip

Slice is better kept in the freezer as the middle layer sofens easily.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
