Dough

  • 50 grams Macadamia Nuts (raw), Halves or roughly chopped
  • 50 grams White Chocolate Chips
  • 80 grams castor sugar, Pre-milled
  • 150 grams plain flour
  • 130 grams unsalted butter, Softened
  • 2 tsp vanilla extract
  • 40 grams frozen raspberries, Crushed

Recipe's preparation

    Preparation
  1. 1. Preheat oven to 180 degrees C.

    2. Line two baking trays with baking paper

  2. Making the dough
  3. 1. Place nuts, chocolate, sugar, flour, butter and vanilla into mixing bowl and mix 5 seconds, speed 6. Scrape down the sides.

    2. Add raspberries and combine 10 seconds, dough function

  4. Baking
  5. 1. Form into approx. 20 small balls, place onto prepared baking trays and gently flatten.

    2. Bake for 15-20 minutes or until lightly golden.

    3. Remove from oven and allow to cool on the trays for 5 minuts and then transfer to a wire rack. You can serve them warm or allow them to cool.

    4. Store in a sealed container.

Tip

To flatten the biscuits I cut a small piece of baking paper and place it on top of each biscuit, then press down using the bottom of a glass to get a nice even finish.

If you prefer a softer biscuit then 15 minutes of baking is better, 20 minutes will make them more crunchy.

You could substitute many other ingredients to change the flavour of these biscuits eg. peanut/choc chip, cranberries, pistachio/white choc etc...

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    My favourite quick biscuit recipe! I have used freeze dried strawberries instead of raspberries that work well too.

    Thank you so much for your feedback! I totally missed the flour instructions (whoops) I've only just made up his recipe so definitely will have a play to make the instructions clearer.

    I use macadamia halves, so I don't chop mine but if you were using whole ones then I would chop first (I'll add this). Also because I'm using frozen raspberries I just crumble them in my hands as I get them out of the packet. The recipe could definitely have more raspberries too.

    Again, thank you for the feedback, I'm definitely no chef and fairly new to the recipe community, so can clearly can make some improvements!

    First attempt looked great in the bowl, but in the oven they just melted....realised I hadn't added the flour after following the instructions.

    Second attempt added the flour at step 2 but mixture was too dry, so added an egg.  It fixed the mixture but took 20 mins per batch to cook.

    Hi, great recipe but I think you can improve the instructions.  When do you put the flour in?  And, do you chop your macadamia nuts and crush your raspberries in the thermomix?  

    I think 10 grams of raspberries added at the beginning and then another twenty added whole would work.

    Hi - do you add the flour with all the other ingredients listed at step 1?  Also, only 10g of frozen raspberries seemed a tiny amount, so I used 50g, and although the dough was a bit wet and sticky to handle, I had lovely pink biscuits!  It made 22.

    Delish!

    Cooking time in my oven was 25minutes!!! Yeilds a large number of biscuits for very little ingredients. Thanks for sharing.
