  • 250 grams Butter, cut in cubes
  • 50 grams icing sugar
  • 1 egg yolk
  • 1 heaped teaspoon vanilla essence
  • 100 grams lupin flour*
  • 290 grams Self Raising Flour
  • 200 grams icing sugar for dusting

Recipe's preparation

    Make Dough
  1. 1. preheat oven at 180 degrees

    2. prepare tray with baking paper and set aside

    3. place butter and icing sugar in bowl.  set to speed 3 for 15 seconds. scraps down sides.

    4. add vanilla, egg yolk. set to speed 3 for 15 seconds. scraps down sides and repeat. 

    5. add flours. set speed 3 for 10 to 20 seconds until dough comes together.

    6. place dough onto lightly floured surface and using hands flatten out dough. keep it 1.5cm high.

    7. using the rim of a small glass, make crescent shapes. this  takes some practice. alternatively, either make small balls and flatten with fork or cut into circles.

    8. place on tray a bake for 12 minutes depending on oven. They will be soft however just ensure dough is cooked through. allow to cool before handling.

    9. dust with icing sugar. keep in an airtight tin.

Tip

*Lupin flour  provides a hint of a nutty flavour and alternative to the traditional recipe. If not available it's fine to replace with plain flour.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
