Ingredients

- 210 grams dried appricots
- 210 grams walnut pieces
- 210 grams dairy free dark chocolate, I used Lindor but it has butter and cream
- 2 heaped teaspoons instant coffee granules
- 1 heaped teaspoon cinnamon
- 1 heaped tbsp nutmeg ground
- 210 grams jaggary (or brown sugar)
- 210 grams peanut butter or tm nut butter
- 210 grams rolled oats
- 210 grams flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda (bicarb)
- 105 grams coconut oil, I leave mine in the fridge so it is hard
- 105 grams Bertolli butter replacement
- 2 level tablespoons chia seeds
- 50 grams water, soak the chia seeds in the water for about 1 hour

"Closed lid" put nuts, chocolate pieces, dried apricots and spices in the thermomix and mix at speed 6 until nuts and chocolate are well chopped - about 1 minute.
Remove from thermomix
put Bertolli butter replacement, coconut oil, chia seeds with water and jaggary in the thermomix"Closed lid" and beat until blended 1.5 minutes, speed 4-5
add peanut butter, mix again at speed 4 for up to 1 minute, then add rolled oats, mix at speed 4 for 30 to 40 seconds.
Remove from thermomix - place in a large bowl, add flour and baking powder, baking soda and salt, mix thoroughly. Add nut, fruit and spice mixture and mix thoroughly by hand.
Drop onto cookie sheet with a tablespoon.
Bake at 160 with fan on for 8 minutes.
Soak chia seeds in water for one hour and chop nuts etc.
Tip
The chia seeds and water replace the the two eggs that were in the original recipe written by Edith Ballast from Wyoming, Michigan. I've also reduced the sugar and replaced the butter.
