Ingredients

Cookie Dough

  • raw sugar, 100gm
  • vanilla essence, 1 tsp
  • Butter, 125gm
  • brown sugar, 95gm
  • egg, whole egg
  • Self Raising Flour, 290gm
  • salt, 1 tsp
  • White Choc Chips, 100gm
  • pistachio nuts, 80gm

Recipe's preparation

    Pre heat oven to 160deg (fan forced) Line a baking tray with baking paper and set aside.
  1. If you are using larger choc buttons, you may wish to add them to your mixing bowl and blitz for 3sec/sp5

    Place raw sugar into bowl and mill 5sec/sp9

    Add butter, vanilla, and brown sugar 15sec/sp6 then scrape down sides of bowl. 

    Add egg, mix 20sec/sp3, then scrape down bowl. 

    Add flour & salt mix 10sec/sp3.

    Knead using your Dough mode"Dough mode" function for 30sec.

    Add your choc chips and pistachios 10sec/reverse/sp3

    Roll teaspoons of your mixture into a ball and place on baking tray spacing them evenly to allow for spreading whilst cooking. 

    Bake for 18 minutes or until lightly golden as all our ovens will vary.

    These are so yummy!!!!!

Tip

This is a very versatile cookie dough feel free to mix up what you add to them. But this combo was a winner!!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    These are delicious! They Taste very similar to subway cookies. I substituted the pistachios for macadamias!! Yum!!

    Delicious. I reduced the raw sugar by 30g and added craisins as I didn't have pastachios. I also used tbls size and made 28 cookies. My grandchildren will be delighted with these. Thanks for posting recipe. This will go into my favourites folder.

    Delicious! Made exactly to the recipe, other than using GF flour. Pistachios go with the white chocolate really well. Will reduce sugar a bit next time, they are very sweet.

    i replace the pistachios with maccadamia and they taste better then subway cookies!

    these are walking out of the pantry faster than we can make them , mine were just white chocolate as I had no Pistachio's thanks for sharing

    Made these for my husband to take to work morning tea. Fantastic easy recipe, I swapped the pistachio's for macadamia nuts. Winner Winner!

    Just made these for morning tea and they were lovely. Recipe worked really well.  I reduced sugar by about 35 grams and I substituted about 30 grams of flour with LSA.  The recipe stated to roll teaspoons of the mixture however that seemed to be too small (and would have made a lot more than the 24 portions stated) so I rolled tablespoons of the mixture instead.  Thank you very much for the recipe.
