Recipe's preparation

  1. Omg if you love cream cheese or ricotta you must make this!!!
    I converted a recipe so I could make the whipped ricotta from Jamie Oliver’s bruschetta he has in his restaurant menu and this is what I made!
    Super quick and easy
    Makes a Small amount just for a few serves
    Could double it easily if you want


    Making ricotta


    Heat milk 15 mins
    Speed 2
    98 degrees
    Take bowl off TM
    Add vinegar and stir in one good spin only and leave sit for 2 mins

    Strain in cheesecloth for 2-3 mins only

    Whipping ricotta


    Add ricotta back to TM while still warm
    Using whisk attachment
    Add 1-2 tablespoons olive oil and a good pinch salt
    And whip at speed 4 for 30 seconds
    Scrape down sides and repeat 30 seconds
    Repeat process again

    Place Into container and cool in fridge
    Serve on crusty bread, with bruschetta etc

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
