Ingredients

1 egg (room temp)

  • 1 tablespoon Dijon mustard
  • 0.5 tablespoon while balsamic vinegar
  • 0.5 teaspoon salt flakes
  • 280 g Light Tasting Olive Oil, do NOT use EVOO - your mayo will taste awful

1 clove garlic (if making aioloi)

Recipe's preparation

    Add egg. balsamic, salt and one clove of garlic (for aioli, omit if making mayo) to TM bowl and mix speed 6 for 10 sec, MC on. Scrape down and repeat twice or until combined. Then with motor running at speed 4, remove MC and drizzle olive oil in through the hole in the lid in a thin stream. How much oil you will use will depend on how thick you want your mayonnaise (the more oil, the thicker the mayo). It should take less than 60 sec, so set your timer for about 2 mins to be sure and you can stop it when you're happy with the consistency. .
  1. At this stage it is nice to add a squeeze of lime or lemon juice and whizz 2 sec on speed 4 (but it's not entirely necessary).

     

    You can also add herbs of your choice for herbed mayo

    This recipe can easily be doubled. In fact it was adapted for TM from a Gary Mehigan recipe from 'Your Place or Mine' that origianlly used 2 eggs. 2 eggs will give you about 2 cups of mayo!

     

    You can also just use egg yolk if you don't want whole egg mayo. This will make a thicker mayo and you will need less oil to reach your desired consistency.

     

    Store mayo in a jar in the fridge. It will keep for weeks

     

Tip

You can pour the oil into the top of the lid of you like and let it drip through, but it's not really that hard to pour it in through the hole in the lid. That way you don't get an oily lid and you can see how thick your mayo is getting.

Towards the end of the process the mayo will all go on to the sides of the bowl - don't be alarmed. You need about 2/3 cup of oil (at least) so just keep pouring your oil in. You CAN stop the motor at any time and check the consistency of your mayo without ruining the end result. This mayo recipe is VERY EASY!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
