Recipe's preparation

    Prepare yoghurt
  1. Put 1000g of full cream milk and 100g of skim milk powder in the Thermomix bowl and cook on speed 3, 30 minutes, 90 degrees

  2. cool to 37 degrees by placing Thermomix bowl in the fridge for about an hour or by placing entire Thermomix bowl in a sink half filled with cold water and several handfuls of ice cubes for 30 minutes.

  3. add 3-4 drops of calcium chloride and begin the automated TM5 plain yoghurt recipe, but skip through the steps until the first heating step. Allow the TM5 to heat the milk, powder and calcium chloride to 50 degrees while mixing. After about 4 minutes the mixing will stop and the TM5 will slowly cool to 37-40 degrees over about 10 minutes. Once it has cooled to 40 degrees, remove the MC and drop in either 200g of starter culture (store bought yoghurt or yoghurt from a previous batch) or a rice grain size of powder starter culture. You can also add a rice grain size of probiotic powder at this point if you wish. Use a spatula and mix the starter culture with the warm milk mixture in the Thermomix bowl for about 30 seconds. Replace MC lid and allow program to continue running for the full 8 hours.

  4. After 8 hours you should have thick yoghurt. Place in the refrigerator and save 200g for your next batch.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     Just made this again and excellent thick results.  This time before placing in fridge I stirred for 20 seconds. I will use the calcium chloride next time now that I know what it does. However this recipe works well without the calcium chloride.

    I find your method very interesting - it backs my theory that the automated function on the TM5 gets too hot for the yoghurt starter culture - from what I have read it shouldn't get over 46C or it kills the starter culture. I checked the milk in the jug in the automated process and while the thermomix was showing 50C my digital thermometer was showing 50.3C. My yoghurt was always curdling and now I know why. Major programming fault in my opinion Thermomix!

    This yoghurt recipe was one of the first things I made in my thermomix (no calcium chloride and store bought pot-set yoghurt for the starter). Was really surprised at how thick it turned out. Can't wait for breakfast! Will only use this yoghurt recipe, it's fool proof.

    I have made this yoghurt a few times now after I struggled to get thick yoghurt using the thermomix recipe in the basic cookbook and the automated yoghurt. It has turned out brilliantly every time. I didn't bother with the calcium chloride but did purchase the probiotics which I am very pleased with.

    I have tried it with half the amount of skim milk powder as I ran out and it worked perfectly too.
