Ingredients
Bread Dough
- 300 grams water
- 600 grams bakers flour
- 1 sachet dried yeast
- 2 teaspoons salt
- 1 teaspoon sugar
- 2 teaspoons bread improver
- 15 grams oil
Cheesy garlic, herb and bacon butter mixture and toppings
- 150 grams cheddar or tasty cheese (roughly cut)
- 125 grams Softened butter cubed
- bunch Parsley or chosen herbs (handful), Can also use dried herbs as well as or instead of fresh
- 4-6 cloves garlic fresh
- 200 grams Diced bacon pieces

- 1. Place water in TMX Bowl and heat for 1min/37*/sp2
2. Add yeast, flour, salt, sugar, bread improver and oil. Mix 5secs/sp4
3. Knead dough for 6mins/"Closed lid"
4. Place dough in an oiled bowl and cover with bread mat or cling wrap. Leave in a warm place to prove until doubled in size. Tip: Place covered bowl outside on a warm day, or use a pre-warmed thermoserver in cooler weather.
While dough is proving prepare Butter mixture. - 1. Grate cheese for 6secs/sp8. Set aside.
2. Chop garlic cloves and herbs on sp9/3secs or until finely chopped
3. To bowl, add softened butter cubes, 1/3 of the grated cheese and 100g of the diced bacon pieces. Mix on sp6 for about 5 seconds or until well combined. - 1. When dough has proved to double size, turn out into lightly floured bread mat. Lightly Form a loaf shape, divide mixture in half, then divide each half into 3 smaller portions (you should have 6 portions in total).
2. Take 1 dough portion. Using 4 fingers make a long well in middle of the dough, place roughly 1tbsp of the butter mixture in the middle and close dough up around the mixture. Roll dough into a snake about 10 inches in length, keeping as much of the butter mixture within the snake.
3. Repeat step 2 on remaining 5 balls of dough.
4. Take 3 snakes, join at one end and then gently braid snakes into a plait, remembering to join at the end. Tuck each end under slightly just to neaten the loaf.
5. Repeat step 4 on 3 remaining snakes.
6. Prepare 2 oven trays with baking paper and place a loaf on each tray. Poke remaining butter mixture into the crevices of each loaf, also on the underside of loaf (being gentle not to dismantle the plait). Sprinkle each loaf with remaining grated cheese and diced bacon pieces.
HINT: you can cook both loaves at once, or what I like to do is cover one tray with several layers of cling wrap and pop it into the freezer for use at a later date. To defrost, it takes about 1.5 hours and is then cooked as per the directions as follows.
7. Place loaf in a cold oven (allowing time for a 2nd rise of the dough). Set oven temperature to moderate (150-180*) and cook for approximately 40 mins. Be sure to monitor the loaves to prevent burning as oven temps vary .

I want to make this for Xmas day, could I make it the day before and cook it on the day?
This looks tricky but it was so easy. I made one with bacon and the 2nd one with spinach and cheese. Both were a hit. Thanks for the recipe!
Great bread, I didn't have time to have it in a cool oven and so missed the second proofing, but it was still great, also I just used the butter, cheese and bacon, curse the kids don't like garlic or herbs.

This recipe is WONDERFUL! Thank you so much for sharing. Unfortunately I didn't use all the cheese and bacon butter but still good. I didn't use bread improver, used ACV instead, turned out nice and fluffy as well.
Made this today for the Mother-in-laws 87th birthday. It looks stunning. Took a bit of time as said in previous posts but so worth it. Added 1t mixed herbs and 1/2 a bunch of parsley. Didn't soften butter - just out of fridge, was still good. Used 2t yeast instead of satchet. Didn't know how long to wait for 2nd rise and as it is a cold day put in cold oven and heated to 130 deg for about 10 mins then cooked in my Weber for 25 mins at 170 deg. Will let you know how it tastes! Have now tasted the pull apart and I would like to say that this is the best thing that I have made in the TM since buying it nearly a year ago. Thanks for the recipe.
I made this on the weekend and really loved it. I made it with a packet of bread mix for a bread maker because I had some to use. It was easier to make than I thought at first and the butter mixture in the middle of all the plaits is so flavoursome. I used parsley, and I think I will put some chives in next time. There did seem to be a lot of bacon and cheese to addd on the top at the end, but I used it all up and it was perfect. For the cheese I used 90grams of tasty cheese and 30 of parmesan. I baked them both and they were gone by the next day. I will definitely use this next time I have people around for a bbq. Great recipe - thanks!
This was delicious! One loaf is plenty to accompany a meal, so the second one for the freezer is a bonus!
