I'm cooking this today

Recipe's preparation

  1. 1) Put water and yeast in the bowl and activate yeast at 37 deg for 1 min sp 2

    2) Pour in all the other ingredients and mix it for 15 secs spd 5

    3) then knead for 1.5 minutes

    4) Let it proof for about 20 to 30 mins

    5) You can roll it out to a rectangle shape and brush some water then roll it like a swiss roll.  Then just divide that long rolled up dough to 16 portions or less if you want a bigger mantous.

    6) Place 1 litre of hot water in bowl, and place all the mantou in the varoma trays with a small cut up square baking paper for each portion so it does not stick to the trays.

    7) Spray some oil on the lid so moisture does not drip to bread.  Steam bread on Varoma temp for 12 mins on spd 4.

Tip

You can spraed sesame oil, salt and chives onto the dough before rolling if you like savoury ones.

You can also spread red bean, mung bean or different paste for sweet ones

You can also sprinkle pork floss.

    TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Punzenlehen:

The method is written sort of funny...
it means Speed 2. then Step 2. its just been put to close together that it looks like speep 22.
same with the other one.... Speed 5.. then step 3.

    Hope this makes sence tmrc_emoticons.)

Great recipe! Thank you for sharing.

I was a little worried after the proving when it didnt rise by much, but the mantou came out perfectly after steaming.

Have tried them with a few different fillings - including Nutella!
