Add all ingredients into Thermomix bowl.
Knead for 2 minutes.
Check consistency. If needed add extra water or flour and knead for a further minute.
Spread a sheet of baking paper and lightly flour. Transfer dough onto sheet and roll into a ball.
Thoroughly clean Thermomix (to avoid any leftover dough from hardening onto the Thermomix during the next steps)
Leaving the dough on the baking paper, place it in the basket And place basket in Thermomix.
Allow dough to rise for 30 min"Gentle stir setting" at 50 degrees Or until doubled in size.
Remove paper and dough from basket. Knead dough until it has returned to original size (about 30s). Shape dough into a loaf.
Return to basket and into Thermomix for a further 30 min"Gentle stir setting" at 50 degrees.
Preheat oven to 200 degrees. Once dough has doubled in size, transfer dough on paper onto a baking tray and bake for 30 minutes or until golden brown.
Tip
This will only work for a small loaf as with the measurements the loaf will expand to fill the basket.
I developed this method of getting my bread to rise so it is firstly reliable and secondly safe from my dog who eats everything (including bread dough).

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Best bread I’ve ever made! Perfect size. I did it in the airfryer and it was really crusty and went perfectly with chilli mussels. I’m thinking a Cobb loaf filled with dip or Brie for the weekend.

My first attempt at bread, nice & easy, worked out well but very bland without any salt added - will try again with a tsp salt.
