Bread rolls
- 250 g lukewarm water
- 2 level teaspoons dried instant yeast, (Don't use straight from the fridge or freezer)
- 30 g olive oil
- 500 g bakers flour
- 1 level teaspoon iodised salt

- Remove 2 level teaspoons of dried yeast from fridge or freezer, allow to get to room temperature
- Place water into mixing bowl and heat on 1 min/37 °C/speed 1
- Place yeast into mixing bowl and heat 2 min/ 37 °C/speed 1
- Add all remaining ingredients in this order Olive oil, flour and salt and mix 6-10 sec/speed 6.
Then knead 6-8 min/"Closed lid" /"Dough mode" - Transfer dough onto thermomat or lightly oiled thermoserver or place in a lightly oiled bowl covered with a tea towel.
Allow to proof in a warm, draft free area. - Knock down the dough with a gentle hand knead, this pushes out the gas a little and relaxes the dough.
Cover the dough and rest again for 10 mins before shaping. - Cut into 8 equal sized rolls using the thermomix spatula, shape into desired shape.
Place into a cold oven with a pan of boiling water at the bottom of the oven and close the door until nearly doubled in size. - Turn the oven onto 200 °Cand bake for 20 minutes until golden brown.
- Cool on wire rack and enjoy

Tip
I find it helps to preheat the over to 100 °C for 5 mins and then turn the oven off and place the dough wrapped lightly in the thermomat on an oven tray to proof for 30 mins or until doubled in size.
