Pudding
- 130 grams plain flour
- pinch salt
- 120 grams caster sugar
- 3 teaspoon baking powder
- 1 banana
- 250 grams Milk
- 85 grams unsalted butter, Melted
- 1 egg
- 1 teaspoon vanilla extract
Topping
- 140 grams brown sugar
- 80 grams golden syrup
- 250 grams Boiling water

Preheat the oven to 180 degrees celcius.
Add the banana to bowl and mash 5 seconds/speed 5
Add milk, butter, egg and vanilla extract to bowl with banana and mix 5 seconds/speed 5
Add the flour, salt, sugar and baking powder to the bowl and mix 10 seconds/speed 4
Pour into a greased 2.5L baking dish
Place brown sugar, golden syrup and boiling water in Thermomix bowl. Cook on Varoma/5 minutes/speed 3
Pour the boiling mixture carefully over the pudding, then bake for 30-40 minutes or until cooked through when tested with a skewer.
Serve with vanilla icecream.

This is our favourite family pudding. I make GF and Fructose Friendly - GF flour, coconut sugar (instead of brown) and 50% Rice Malt Syrup, 50% Sugar Free Maple Syrup (instead of Golden Syrup). Delicious!

As a variant I added cream and butter to the sauce as with sticky date pudding butterscotch - this made it quite rich, but my people were happy with that.
Also seems to work to cook for 15-20 mins prior to adding sauce so you get some texture to the pudding rather than boiled dough

Tasty however would go with the comment below about adding the sauce once the pudding has cooked a little first. My batter was quite runny and so the sauce seemed to blend in with it rather than making a sauce.

This recipe is so good! Made it twice this week! With EDC custard. Also had two bananas to use up so it had a fabulously rich banana flavour.
