- 1 package Chocolate Ripple Biscuits
- 1/4 Cup desiccated coconut
- 50 g Butter unsalted
Cheesecake mix
- 500 g Philadelphia Cheese, Roughly chopped
- 1/2 Cup castor sugar
- 200 g cherry ripe bars, Roughly chopped
- 150 g Thickened cream
- 1/2 package Glacé cherries (red)
- 100 g Dark Chocolate Melts
Topping
- 100 g cherry ripe bars, Chopped in shards

I'm cooking this todayRecipe's preparation
1) line springform tin with baking paper
2) place biscuits and coconut in TM bowl and mix 30-40 seconds speed 9
3) add butter, mix 60degrees 1min speed 4
4) press into lined tin and refrigerate
1) place ingredients in TM bowl and mix 60 degrees for 2 min speed 4-5
2) pour over base and refrigerate for three hours or more
3) top with extra cherry ripe pieces

Love the idea of fresh cherries!
I made this recipe and the family LOVED it. Only used half the number of cherry ripe bars, used real fresh cherries instead of glace and Cadbury Old Gold instead of melts. Beautiful!

This was delicious but super rich so only needed a little to feel satisfied Yum!!!!
Yum! I halved the sugar and next time will leave it out. The chocolate and cherries make it very sweet. While it was mixing also added 1 tsp gelatine dissolved in a few Tbsp hot water . It set really well and probably didn't need the gelatine, but I was making for guests and didn't want to risk it! Left the cherries out until the last few secs of mixing as I like the texture of chunky bits of cherry. I agree with adbuchanan - definitely only need a very small slice. This is an absolute winner for cherry ripe lovers and very easy to make.
I didn't think about gelatine, but worth a try though. So thanks for the suggestion

My family being cherry ripe lovers enjoyed this cheesecake. It was easy to make, however it is very rich so little slices are preferred.
